Nonnie's Chicken or Pollo di Nonna


I don't know what this is really called.

We called it something - but I don't even know how to spell it. Pitacchia - but I don't think this name even resembles anything.

This is heavenly and easy to do.
More of my childhood comfort food.

You need Chicken, white wine, rosemary, garlic, salt, pepper and olive oil.

You must use leg/thigh quarters...Cut them into 3 pieces - the marrow of the bone helps flavor the dish.
Be generous with the salt and pepper.
Brown in hot olive oil.
Throw in a head of peeled and smashed garlic.
Pour in an entire bottle of wine.
Throw in the rosemary.
Simmer till it nearly falls off the bones.
Serve with bread to dip the wondrous juice.
Usually I opt for a simple green salad too - tonight, I did a simple torn caprese.
